Implementing Spraypaint Middleware

I am looking to add a request header via an interceptor. The middleware code examples are great and I am able to get that working. My question is how best to implement the middleware. Should I maintain single or have multiple instances? Should there be one global interceptor or one per header I want to update? The documentation is rather vague outside of the code examples. Thank you for the help!
