Observability Module: Logging in EKS: Pod Logging

### What would you like to be added?

Our recommended approach to enabling Pod logging to CloudWatch is now the Observability add-on. I want us to move from the fluent bit manual install example to using that add-on.

### Why is this needed?

This will encourage best practices for our participants when enabling pod logging  in their clusters.
